Greek:
Ancient:
*Ephialtis (could be considered a persian spy)
*scetale was invented by ancient Spartans, but I can't find the inventor
*Ieron Not a spy himslef, a tyrant. Creator of the first spy network in ancient Greece.

Modern:
*Emmanuil Xanthos, Nikolaos Skoufas, Athanasios Tsakalov coofounders of Filiki Eteria, the secret organisation that organised, led and initiated the Greek War of Independence
(Alexander Ypsilantis died early. Moreover he was more a political, military figure and not a spy)
*Nikolakis Ephentis, spy during balkan wars, unfortunately there is no wikipedia sources
*Pavlos Melas, most important participant in Macedonian Struggle.

*Apostolos Evangelou greek spy that helped allies during WWII
Steven John Lalas, was unsuccesfull, so he might be left out

EDIT: Added Ieron as ancient spy. IMO Greeks should share the same spy pool with Byzantines
 
Korea :

Non Gae
- A Kisaeng(기생; similar to waitress and/or Japanese Geisha) who had intentionally seduced Japanese general during the Japanese invasion of Korea(Imjin war) and killed him with herself by throwing her body into the water.

Yun Bong-gil
- Patriot who managed Hongkou bombing during the Japanese wartime ceremonial in 1932.

Lee Bong-chang
- Patriot who tried to assassinate Japanese Denno family in 1932, but unfortunately failed.

Ryu Gwan-sun (not sure)
- A female student who had devoted herself into independence movement during the Japanese colonial period, and later been tortured and killed by the Empire of Japan.

Spies have been replaced by Statesmen, but Great Spies still exist. They are created from Spy experience now, similar to Great Generals.

Anyway, Majapahit has been known to use intelligent on wars. There's also one more person sent to Kingdom of Sunda to find princess that will suit King Hayam Wuruk to be his queen (remember the story I told in South Asia discussion?) but I forgot who and doesn't really have time to re-search my history for that link haha.

Joan Pujol Garcia, WWII double agent. Received both prestigious British and German awards.
