I'm very pleased with the service and support I've been getting from Aspyr and Apple. Aspyr tested a system with the same configuration as mine (Mac Pro/2GB/X1900XT) and couldn't replicate the problem. So much for my theories. Since that means it's my machine that's acting up, I called Apple again. This time the Product Specialist said "Oh, you probably have one of those defective early X1900 XTs - we'll just send you the Rev 2 version. You can install it yourself." all around.
Yup, it was the card. No problems with the version 2 X1900 XT. Interesting that a video card failure on a Mac Pro would produce exactly the same symptoms that were fixed with a software update on the new iMacs.
