You're right... bright and dark don't make a lot of sense together... But trust me.. we're talking an intense, dark purple colour... almost made me vomit just looking at it... I've had steak so rare that I could taste the blood... but a French "rare" is even far worse then that...
 
If I eat red meat, I always have it well done. t tastes better, and is less chewy than rare, so I like it.

But I don't eat red meat often.

I suspect that it is partially because of his bad-taste (as evidenced by his preference for medium-well).
 
I perfer Medium cooked.

Not really.

I'm a steady meat eater, and I consume almost no red meat.

Instead, I prefer the fineries of poultry, and, being an Oregonian, fish.

Here we call it Black and Blue or Pittsburgh, I'm pretty sure blue is a synonym for this.

I prefer medium rare myself, a good tartare can be tasty as well though.

If you order a well done steak in a restaurant you will most likely get the oldest, nastiest, nerve end filled piece of meat in the kitchen. The reasoning is that once it has been cooked to death you can't really tell, but if you used it for medium or under it would be noticable. Well done eaters help reduce the food waste.

Pan seared steak done right is incredibly good, it is all about temperature control so that you carmalize the outside rather than fry it.
