I've yet to find an enderman :(

Haven't seen an Enderman yet, but I've found some shifted blocks - trees with bits missing, random leaf blocks lying on the floor. Nearly starved to death because I forgot about food, lol.

Cartograph seems to work, but I didn't have any new blocks around to screw it up. There are some interesting features to the north of me on the edge of the explored region: a lava pool, some mountains with overhangs, and a ravine. I'm loving the map generation so far.

Its a lonely island in the middle of the ocean with a tree and a huge cave

I think we answered that on the last page :p

Head towards the sunset and you'll find some huge mountains. Including what has to be the greatest spot for a castle ever.

Endermen are pretty neat. The first encounter with one had me surprised, because they attack you in an intense fashion due to their constant teleporting. I was lucky with the first since it was at sunrise, and Endermen can't handle light that well, but they are pretty easy to deal with once you've gotten used to them.
Still, they are a pain when taking parts off your creation. Especially if they're removing the staircase to the giant tower you're building. :p

See, that is a problem, and is only going to result in them getting disabled because no one wants them taking random blocks when you're building stuff.

The thing is that they're easy to stop regarding that, but at least one still has the ability to set it on peaceful if it somehow becomes too much.

WHAT!? I thought they were meant to only move blocks NOT placed by humans. I even saw somewhere that in pre-release they were moving blocks placed by humans and it had been reported as a bug.

Hmm, now that you mention it, it may be because some of the staircase was already a part of the map when I made it. Didn't happen more than once either.
