N00b question :)

Hi Guys, im new to the site and pretty much new to the game, i was just wondering, is there a way to set the game so there isnt a date when it ends? as in you play to the last man standing sort of thing?

You can, however, extend the number of turns. Assuming you're playing PTW or C3C, you can click on the Game Limits button in the Civ Selection Screen, and change it from the default 540 to 1000. While not quite doubling the length of the game, it does add quite a bit of extra time.

If you're just playing regular old Civ3, I think there's an .ini setting to change it, but I don't recall what it is off the top of my head.

And every game you play can be played past the victory conditions. But no other victores will be recorded, nor the score increase any.

i think the Rise and Rule Mod allows for an extended play as well.
