The first time I built a nuclear plant, it exploded about 20-30 turns later, which begs me to ask: is it really worth the risk to have them over coal plants? Hydro plants seem to come just way too late to make that big of a difference. The only exception may be if one absolutely cannot get coal in any way.

One question, if you built a coal plant earlier and then build a hydro plant later or build the Three Gorges Dam, does the unhealthiness from the coal plant automatically go away?

Scroll further down. There was an active thread about a month ago that addressed all these issues.

The unhealthiness from coal goes away but in BtS you still get a -2 health for power.

Nuclear plant are absolute garbage. Once one explodes global warming starts and cannot be stopped, and even when you've removed global warming like I have, you can't clear up the fallout until Ecology. Get the coal plants, and if you have to just add a few more farms/windmills to counteract the unhealthiness.
