I do! I even saw it in HMV once! 
Was a bit strange really, as I got my copy of HoI2 on release day, then never saw a copy again. Now I see copies of HoI Doomsday pretty regularly. I guarantee that when I actually want to get a copy they'll be sold out.

I saw copies of Doomsday a couple of months ago at EB. I haven't seen a single copy since then. If I were to find a copy of it though, I would buy it.

I'll get the demo, but I'll try not to take much from it. The HoI2 demo was terrible, and almost put me off buying the game. If it had added some of the tutorials (such as, say, how to use troops) then it may have been better. Otherwise, it was just confusing.
HoI2 was pretty remarkable in that was a Paradox game that didn't need to be patched before it was considered playable, I'm hoping EU3 will be the same.

As mentioned in the EU3 thread, most probably the first patch will lower the requirements for the video card from 128 to 64 MB. So there is still hope!
