I think religion should defintley be incorporated into the game, but people seem to think it could offend people but what it if religion actually had no advantages but just acted as part of power to influence other civilizations i.e. frieldly and propaganda and even justification for wars. Also I don't think you should have any control over it apart from slighty influcing it but your people will be able to reject this, for example it would be possibe to encourge a Jewish nation to turn to Christianity but unlikely to convert them to Hinduism. Also it should be possibe to have mutiple religions in your civ for example one city may have 80% buddist and 20% muslim poeple but elsewhere your civs primary religion is Islam this will make it easier for a primary buddist civ to convert the civ to thier own.

Hmmm, perhaps in Civ 4 *he says hopefully:D* religion could be incorparated so that it plays a larger role, but currently I am pleased with the way it is delt with in Civ 3.

I'm not particually big on religion (being an aethiest and all) but I must admit it would be very interesting to see how a game such as civ would deal with religion. For example watching it grow and devlop over the course of the game and watching how it affected each civilizations actions and motives.
