Ionia and the Balkans are mostly Christian. Egypt is about 40% Christian still at this point in history; Christianity didn't seriously decline in Egypt until the Greek Wars of Independence IRL. Constantinople and surrounding areas are still at least 40% Greek (Christian). Plus, this isn't a religious war. Muslim Romans are perfectly acceptable. Turks, however, are not Romans.
