I don't think a Manchurian city is likely. They weren't known for their science. Seoul could be replaced by a non-East Asian city, since this is the expansion. They changed Jakarta to Bandar Brunei in a DLC and still kept the same symbol. Whatever City-State replaces Seoul won't keep the same symbol, since it's so obviously Korean/or Chinese.
They would have to change the Amsterdam logo as well. Also some city-states are getting new suzerain bonuses, which I think the Amsterdam replacement could get if their bonus becomes part of the Dutch Unique Ability, which I think could be likely.Seoul's bonus is generic though and wouldn't have to change, although it would be for the better no matter what city it becomes.
I'm not sure what the Chinese government would think of Taipei being a separate city from China in a game. Then again, Hong Kong is a city-state, but maybe they changed that in the Chinese version?

I don't think China argues about Hong Kong; as they were historically always British or a British Crown Dependency (up to 20 years ago). Taipei on the other hand wasn't really "more independent then it currently is". Hong Kong was undisputedly independent from China at some point.
I would expect Pyongyang to be on the Korea city list. Although it wasn't in the part of Korean peninsula that Seondeok ruled, and it's in the generally disliked part of Korea today, it's indisputably a Korean city.

Pardon my ignorance on this issue.. I'm gay, I never have to think of breasts in ANY fashion but even in the images I've seen of her, there are none where her breasts sag THAT low. It may be a Dutch custom I'm unaware of, and I indeed mean no offense by this statement. Am I the only one who noticed that?

Both "Maya" and "Mayan" are correct. Mayan tends to be used either as the language or adjective rather than the demonym, but I don't think it's explicitly incorrect.
My understanding is that the people are Maya and the language is Mayan, by convention. There are about seven million Maya today, if anyone wants to reach out to them and ask if that's true.
