I also recently discovered the joys of changing your civilization adjective in custom games... now I can rename my empire to the "Evil Empire" and have other civs saying things like, "What can humble America do for the Evil Empire?"... and my land is 100% Evil.

Definitely one of the best things about this game, the flexibility in customization whether it be mods, or what you name your empire and units.
