Which wonders are a must?

Yea, for domination you don't really have to build a wonder and build them instead. I think defensive wonders could be useful though. Wonders like red fort or great wall could really slow down your armies or navies even.

It's nice to get Brandenburg Gate in the city of your preference. Getting production and infrastructure up in a conquered city can take a while and youre not producing units then. But I can't say I even built it in Immortal or Deity games. The location of other wonders like Pyramids doesn't matter because the bonus applies to all your workers.

Alhambra is another wonder that is location dependant, and some of the culture wonders but you're not intrested in culture anyway.

I'd say the Great Wall is essential not because you'll need it but to deny it to a future victim.
If you'll be fighting rough terrain then Alhambra is very nice as you'll be able to pump out melee units 1 promotion away from march very early on. Mt Killi(a natural wonder) is very nice as a scout placed on a hill 3 tiles away can still take the city, a very fitting end to your victim(taken by a scout).

Brandenburg gate if choosing order ideology. Autocracy has tenet which gives same benefit (+15xp) in all you cities.

I guess it depends on how soon you want to start fighting...

If you're not interested in racing for victory there is a lot of available timings to attack and the further they are the more room you have to build a couple wonders. Also the difficulty level make it more or less likely to be able to do so.

Here are a couple that are good to get:
Pyramids
Statue of Zeus
Brandenburg
Notre Dame (better to capture it early though).

Either way, if you spend too much time making wonders for a domination victory you're doing it wrong.

As for natural wonder you'll want Mount Kilimanjaro, Fountain of Youth and Eldorado.

Is building Great Wall and Himeji Castle just to deny other civs a realistic strategy or too much of a time waster?

Great wall serves double functions. It denies your opponent and it also protects your lands from barbs when your army is away.

No wonders are a must. If they are, you're not ready to play deity.

1. Pyramids, so you can build roads quickly.

2. Wonders that give a one-time effect.

3. Happiness wonders, if the AI hasn't built them for you.

4. The Great Wall, so the AI can't build it.

Heroic Epic is a great National Wonder. Works extra well if you have a city with Alhambra and Brandenburg Gate. The +15% bonus applies to all aspects of unit strength so its like a super free promotion.

None, don't build any wonders. Once you win without wonders you can optimize by adding them.
