Either Death or Rincewind, or maybe Ridcully. Probably Death though (of the humans).

Hardly; Granny Weatherwax has a minor role in it, that's all (and seems to be a fairly different character from in the later books, as well). By that standard The Colour of Magic would be the first Death book, etc.

Minor? She is the girl's main supporter!

Yes she is different. But so practically everybody in those early books. Even Rincewind was half-able back, and explanation given for his magical inabilitywas the Great (Spell?, Conjuration? ...?? only read early ones in translation).

Tom Cruise as the Librarian? Bruce Lee as Twoflower? Eddie Murphy as the Bursar?

How about Sir David Jason as Albert and Ian Richardson as Death? Why those two names; see here: The Hogfather tv movie on sky (in the uk) coming soon! DVD out in March or so. This one looks fantastic, I had the privilege to see the trailer at the Discworld Convention in August and all the fans, including me, gave it a standing ovation.
