I now have a convection oven, which means them really easy to shrink and dehydrate - I like their flavor better when they're roasted. And, they are great for bulk. I can (and do) easily add them to stews, making them 50% of the volume of a stew. Their nutritional profile ain't so bad, so I don't think they're all that fattening when I overeat them. Convectioned mushrooms and gravy are delicious. The other parts of the stew are just a bonus.
