First off, catapults (and siege units in general) don't have a "huge" malus against land units. It has a -33% modifier, which is significant but not insurmountable. Its higher base RCS means that it surpasses the base comp bow fairly quickly (e.g. GG + Morale), and even the gap between one with equal promotions/modifiers is not all that high, although still there. The real weakness of siege units is the fact that they'll die at the slightest breeze, not that they are unable to kill non-city targets.

Second, you are way underestimating swordsmen here. Swordsmen have 17 CS. A spearman has 12 CS. This is a massive difference. Cover I is also outright superior to Formation I in defending against ranged attacks. Maybe it has one less promotion due to being more newly trained, but that still is nowhere close to making up for a 5 CS difference.

Third, I'm not really sure just what more you're expecting here. Your spearman took 4 full hits and survived with what looks to be over 20 hp, meaning that it might have even taken one more. Frankly, if a unit takes 4 full hits of equal tech level, then I'm pretty sure that it should die, or at least be close to it. I'd be way more concerned if the spearman was able to last a full 2 turns of that happening- meaning that it would have survived a whole 8 hits.

Don't know if this is a bug, outdated Civilopedia text or already fixed in yesterday's patch, but even though the Civilopedia page on Interception says "Unless the attacker is killed by the interceptor, the air strike proceeds", I've noticed that intercepted air strikes never do damage.
