As someone from a one-plate state (Pennsylvania) who regularly goes to a two-plate state (New York) I can confirm that nothing happens.

If you live in an area near the border with lots of other one-plate drivers, of course not. Now try moving to San Francisco and see how long it takes someone to pull you over.
