My mother decided to try Spam out on us once. The dog loved it.
I think spam is underrated. You have to cook it enough to reduce the fat content and get some maillard reaction going on, but it can be a great economic and shelf stable protein source.

Broadly speaking, I think I'm in favor of legalizing and regulating recreational drugs, but hearing stories about the violence in Mexico, I don't know if an American can partake in good conscience without knowing exactly where what they buy comes from. I think a lot of Americans can now get marijuana from reputable, local sources, although that's still moving slowly in some places (it's still illegal under federal law, even if it's legal under state law, which I think makes it difficult for those businesses to get loans and insurance and whatnot; some municipalities and individual landlords may also be reluctant to allow those businesses until federal law is cleared up). I've never been into a store, but I imagine if you ask where their stock comes from, they could tell you. Anyway, I heard yesterday that during this latest campaign season in Mexico, 30 candidates for different offices were assassinated. The mayor of Cotija de la Paz, Michoacan (in the southwest, on the Pacific coast), was shot 19 times the other day. I don't know if the US is the sole market for the Mexican cartels, but surely it's the largest. I believe they also get most of their guns from the US too, but I guess I don't know that for sure.

I am not sure how much of the blame is on those who use them compared to those who keep them illegal so the people who use them have to choose between not using them and supporting a war, be that in Columbia, Mexico or Afghanistan.

IIRC, Colombia's response a few years ago was basically: you reduce demand and supply will drop as a consequence. I'm not sure if it was naive, a diplomatic way of saying, "Piss off!", and whether the latest Colombian government is of the same mind.

US Congress members, Senators and their staff all volunteering to be tested weekly would be a good start and a great example to show their constituents they are serious. :)

You really just soldiered on straight through those austerity years, didn't you! I can almost see you eating it with a fork and a bayonet while watching Lord Cameron's gammon face glow on your black and white TV. :)

I guess my mum didn't get rid of the white lumps of fat by cooking it longer, or burying it in a peat bog.

TIL: the Maillard reaction also contributes to the preservation of paleofeces.

Most of it would be on the latter, I would think. Like I say, I'm broadly in favor of legalization (not just decriminalization), and this is part of why. For purely recreational drugs like cocaine, I think more could be put on the users to find something else to do. (Also marijuana, but like I say, I think marijuana users already avail themselves of alternative sources. I'm not sure how much of the That's probably part of the reason the Mexican cartels have gotten into fentanyl.) For people addicted to painkillers and making do with heroin and fentanyl, I think there's a lot more our government could do. It may be too late to bring the hammer down on Purdue Pharma even harder, for starting and/or exacerbating the crisis. I'm not sure anyone is spending their life in prison for that. The Sackler family ought to be financially ruined. They should have to get jobs at Target to make ends meet, as far as I'm concerned. But that wouldn't solve the problem that we currently face. Merely making these drugs legal wouldn't, either. We'd have to correct the problems in our healthcare system that contributed to people getting addicted to opioids in the first place and then didn't provide them with sufficient help. And that's a huge problem, that's much bigger than 'just' the opioid epidemic.

It also solves a lot of societies problems with opioid addiction, if people are not doing crime to stop shaking.
Eh... Crimes committed by addicts aren't really the big concern. Crime in general is not the problem here many Americans think it is. In this case, the real problem lies in helping the addicts, and in providing proper medical care to people who are forced to resort to illegal and counterfeit drugs. I mean, sure, crimes being committed by addicts would drop if there were fewer addicts, or if they had proper resources available to them, but that's really an ancillary issue. I think addicts are more likely to be victims of crimes than perpetrators, so providing better care for them might help them avoid being victimized.

"Escallops" makes it sound like a choice to cook something fancy and French, instead of an act of grim desperation (noting the "as required" in the list of ingredients).

Escallops of Penguin Breasts
Ingredients:
Penguin Breasts as required
Reconstituted onion
Some fairly thick batter
Flour
Salt and pepper to taste

Cut the breasts into thin slices and soak in milk for about 2 hours. Dry, season and flour them well on both sides. Have ready some deep frying fat. When just smoking hot dip the pieces in the batter with the onion mixed into it and fry each piece to a nice golden brown. For a sauce turn the contents of a tin of mushroom soup into a saucepan and heat but do not boil. When hot pour over the meat and serve with fried potatoes and peas.

e.g. Richard Sackler and co.
I was thinking of individual street crimes - assault, robbery, sexual assault, etc. As I say, I think the Sackler family should be ruined, and some of them should be in prison, but at this point, that's closing the barn doors after the horses have gone. The problem is much bigger than Purdue Pharma now. I suppose a more serious judgment against Purdue and the Sacklers might be a stronger deterrent to American businesses doing anything like that again, but I can't imagine it would have any effect on the production or distribution of illegal drugs, which I think is the biggest issue in the opioid crisis now. Google says you can still get OxyContin with a prescription, but I don't know how much Oxy is still a part of the current crisis. Probably not "none." Once the wildfire is out of control, simply dousing the point of ignition doesn't do a lot; the point of ignition may not even be burning anymore.

I wonder what this is for. All the recopies for sweetbreads call for this, but I cannot figure out why.

Google:

Soaking your sweetbreads removes any impurities and blood in the tissues. Use milk or buttermilk to mellow out the gamey taste that sweetbreads, like all organ meats, can have. Buttermilk gives your sweetbreads a slightly sweeter flavor that works well with "southern-fried"
