It'll likely start with a flip as the Norman County of Apulia and Calabria in 1043, as under William I. Then once Sicily is conquered it will become the Kingdom of Sicily, reflecting Roger II uniting the Norman conquests. Sicily is the name the Normans and Angevins used after 1130AD, even when they didn't control the island itself. Hence the Kingdom of the Two Sicilies in 1816.
As a starting point:

UHV 2: Have more warships than any other Mediterranean nation in 1250AD, reflecting KoS as a leading maritime power
UHV 3: Control all Greece and Thrace in 1450AD. The ahistoric one reflecting the Norman rivalry with the Byzantines
