It was a four-legged mammal.. I don't think they ever directly said what kind, but it looked to me more like a donkey or small horse.
Anyway, I'm still waiting on the main part of the question, the name.

Wait, the Cows are SOUTH PARK'S mascot. MIDDLE PARK are the Cowboys. Their mascot is a donkey/pony/horse named Enrique. He gets blown up at the end. Great episode!
