Anyone know how a TIE fighter works? Do those huge side panels even do anything other than serve as huge targets?

And yet I saw one flying in Hoth's atmosphere during a snowstorm. Besides, I don't think a solar panel on a space fighter will have much opportunity to absorb starlight anyway.

They are very, very good solar panels.
I actually just checked Wikipedia, and it confirmed what I have read before, they are solar panels.
More about the TIE fighters is that they lack hyperdrive, life support and shield generators, so they are very easy to destroy.
Lately, in fact, people have been describing them as "radiator panels", not solar energy collection panels, with the TIE/ln's engines fueled by a small tank situated at the bottom of the cockpit. This explanation gains strength from the idea that the TIE/ln is a "short-range fighter", per Episode IV.
But, yeah, this is all just explaining away something that was designed to look cool first. And eyeballs - and squints, dupes, trips, etc. - definitely look cool.

People who make scifi imagery have never learned that the concept of "form follows function" actually tends to work with scifi geeks. So they waste everyone's time just trying to make things that look cool. When they aren't making things try to seem both cool and familiar by grafting on things just because the ignorant public would find it more recognizable. So you have star destroyers with large superstructures and bridges well above the "deck" because, well, because that's the way some people expect to see ships look.

What is wrong with the sentence "Graffiti as an act of vandalism is a crime"?
