No countries in particular just northern Europe I think for the snow and stuff. Not much snow in Australia.
You will get (relatively) little snow this winter.

Germany has very good tradition of Christmas markets and all that stuff: any big town may be good to get the atmosphere right with great food and great drink (Dusseldorf and Berlin come immediately to mind).
For something more "exotic" you may visit Stockholm: you get the right Christmas spirit, beautiful girls, one of the best opera in the nordic, and in general one of the most beautiful towns to visit.
No snow yet (I was there yesterday) but it should come.
From there you can take a relatively low cost flight to Kiruna, the northernmost town in Sweden.
There you can indulge in all the winter activities you want including sauna with running naked in the snow, ice skating, (cross country) skiing, visit the largest and deepest iron mine in Europe (2000 meters deep, visit to -800), and visit the amazing
ICE HOTEL.
That should be good enough.
You may have a 2-3 days run to Narvik to see some fjord on the Norwegian side... but that's a bit of a stretch.
