Personaly, I dont think atheism in general needs a symbol. But atheist organizations do have symbols of their own.
The American Atheists has their own symbol for their organization.

I am confident that there are people named "Tom" in Australia, although I don't know any. I'd say that's a pretty safe bet. It's an educated guess

No, people do not believe that something that is 99% certain is absolutely true. They believe it, strangely enough, to be 99% certain. However, this leads to the assumption for every action that it will be true, because then it is more likely than not that the action will be based on a correct outlook.If an atheist believes evolution is real, then they have a belief in science.
