Yeesh, just take a look at console games. A lot of them get delayed for months and months (I'm looking at you Nintendo!) to make sure everything's perfect, and they only have one platform to make sure it works on! With PC games, developers have to try to make sure it runs on a much wider variety of setups. There's much much more to a computer than just CPU, RAM, GPU, etc.
I guess you have to have some programming experience to fully appreciate how painstakingly laborious debugging software can be at times (read: always). You can't just simply wave your mouse over the code and clean out all the bugs.
