Why so much variability among dogs but not cats?

Dogs are more prone to mutation and have been domesticated a lot longer than cats (perhaps 100 000 years vs 10 000).

IIRC it's more like ~40,000 years for dogs and a few thousand for cats.
 
Any animal can become stressed to the point of becoming aggressive. I saw that happen to the neighbor's cat (I mentioned the kitten who used to sneak over to my side of the balcony in my old apartment).

The kitten in question lived in a household of two adults and three children - and four of the five people there were constantly screaming, crying, or shouting. The kitten, whenever she was outside, would crawl under the partition dividing the balcony and come over to my side... quiet, no kids, no shouting, no risk of being stepped on, pinched, hauled around...

As the months went on, I noticed a change in the kitten's behavior. She was becoming more aggressive, using claws and biting when she didn't used to. It's not her fault; she was just trapped in a very stressful situation that is, unfortunately, probably going to lead to her scratching or biting one of the kids, and getting either kicked out to fend for herself or abused in other ways "because she's a bad cat."

Nope, not a bad cat. Stressed cat who could be rehabilitated if rehomed in time to a household that's quieter... which is what I hope they finally did.
