Not sure if I have misinterpreted the UHV but Carthage "reveal 50% of African coast" seems not to be working. Attached save - you can see the numidian cav has gone round basically the entire coast of africa. Should be UHV complete as it has revealed >80% of African coast tiles (I counted), but the UHV screen still showing only 28% revealed
That's not how this goal works, for a tile to count as revealed all surrounding water tiles need to be revealed. You cannot just accomplish it by scouting from land, you need to use ships.
While playing as Thailand, I lose contact with Portugal and the Aztecs on the same turn as the Dutch spawned. I reproduced the error twice and saved on the turn before it happens. But now when I go back to that save and move to the next turn, I do not lose contact with those civs (I didn't do anything differently). Still, I'm posting this here in case there's anything you can learn from it.

One more World Builder bug: I can't place any of the new resource variants. When I select one, for example the diamond Gems, nothing happens when I try to place it on the map. Is this part of the "Aesthetics" or "Additional Content" that you'll address later on or a genuine bug at the moment?
US builds settlers and sends them to faraway city to just keep them there. I am not sure they plan to colonise the Pacific before Midwest so might be a bug - save attached.
Overall Manifest Destiny is a bit weird - it targets only Pacific coast cities ignoring all in the middle and is possible even if US is my vassal. It might be intentional but it doesn't happen with Turks conquerors.

Also, 1UHV a bit easy (but i was hit by pleuge), since you have a lot of plantation (Caste system), and probably 3UHV (get Celts or Norse or Sweden Core want be a big problem)
Is it intended that Natives try to form doomstacks outside a city? Those Arquebusiers have been sitting there for a while now and any new nearby spawning Natives seem to go and congregate there? From my experience in 1.17 they mostly attacked any settlements on sight.

After a few minutes playing with the world builder to see why my Andean road connection was not working, it seems that any mountains on the coast also need a road for it to count, making the goal impossible. Settling the Galapagos is also required to complete the goal, which I assume is a mistake.
Playing Japan 3000 BC normal speed, getting a crash at end of turn 1200 AD. I played a previous game with no crash. China collapsed before the Mongol spawn in this game, whereas it was intact in the previous game, so maybe the Mongol war declaration on China is causing the crash.
I playtested Mexico in the 1700 AD scenario, I have a save from the start and another one where the game is more advanced.
One question I have about the UP: Does it work with production output in general or when a city builds Science?
At the beginning, I had to WB myself an army because otherwise defeating the Spanish army stationed in Guatemala would have been impossible. Ever since I started the game and even after making peace, for some reason I can't do diplomatic relations with Spain whatsoever. Speaking of Spain, either Peru's independence or collapse to the core should happen more often, they shouldn't stay a major power.
I also noticed that Burma and Java don't have text names for republics. I've attached an image where the two civs are visible in the menu.

I don't think any of the new civs have dynamic names yet. I checked Burma's dynamic names file and there's nothing there except Bagan Kingdom, for now.
Been going through the civs in order, and noticed specific things for Polynesia and the Celts.
With Polynesia, I noticed that the capes intended to block access to SE Asia around New Caledonia and Papua New Guinea can now be avoided, partially through Micronesia and the Philippines. Some more capes may be necessary!
Secondly, while playing as Celts, no matter how stable I am, if I lose a single city to Rome, I lose control of all my continental cities. I have included a save where a legion is about to reconquer Mediolanum; once it does so, I lose all cities besides my new settlement in Ireland. Seems somewhat off but it could be working as intended?
