Salads are good for you!

I have potatoes pretty much everyday, and am fine.
 
You can have a bottle of Coke everyday at your age, and still be fine. That doesn't mean it's good for you. I consider potatoes to be a junk food; their glycemic index and calories are too high for the nutrients that you get. Turnips and sweet potatoes are many times better, and can replace potato in the diet very easily.

Sadly, what you eat now will matter in your later life; just like smoking now will affect you later.

That's like the study that said being fat is bad for you.

Recently we've learned that there's a marked difference between visceral fat and subcutaneous fat. Visceral fat (fat underneath your ab muscles, that pushes out the belly) is associated with really bad health effects. OTOH, subcutaneous fat is not very associated with bad health.

However, in order to develop subcutaneous fat, chances are that you're piling up visceral fat first. Visceral fat is stored and generated first.

Coffee ring

In physics, a coffee ring is a pattern left by a puddle of particle-laden liquid after it evaporates. The phenomenon is named for the characteristic ring-like deposit along the perimeter of a spill of coffee. It is also commonly seen after spilling red wine.

Writing in Nature, Robert D. Deegan of The University of Chicago and coworkers show that the pattern is due to capillary flow induced by the differential evaporation rates across the drop: liquid evaporating from the edge is replenished by liquid from the interior. The resulting edgeward flow can carry nearly all the dispersed material to the edge.

Every food has pros and cons. I don't see why you're singling out potatoes.

Sorry to be obvious, but the point of this study was not to answer the question, "How are salads healthy?" but the question, "In what way are salads healthy?" The trivial is just as legitimate as a study as regular ol' exotic and cool science is.
 
The elevated levels of lycopene and folic acid seem to be very significant to me. It looks like decent levels of lycopene are extremely important to healthy aging.

My 1 1/2 pound salad that I eat each day:
-Romaine Lettuce
-Celery
-Carrots
-Olives
-Green Peppers
-Scallions
-Sunflower Seeds
-Chick Peas
-Broccoli

This is very, very solid. I assume the rest of your meals offer some diversity, but you should be commended for getting such a heavy amount of greens in your diet. I hope it pays off.
 
That's where we heard about it first, that it seemed to protect against prostate cancer. But its effects on HDL are rather significant, people think.
