Anyway, it seems like my MIDIs get higher when I convert them to MP3s. Why?

My admittedly BS understanding of MIDIs tell me that they get higher when you convert them to MP3s because they're not just instructions for virtual players anymore as MP3 but a format of actual sound... If that's what you mean by get higher.

Nah, flyingchickn is right. A MIDI file is a sequence of KeyDown/KeyUp instructions for playing samples (i.e. basically how long you press keys on the synth for), accompanied by the sample data itself (i.e. the waveform of the voices).
