I'll start at the bottom, and then work my way up until I feel a get a "comfortable" challenge (which will likely be prince or monarch) ;)

Will start at Prince I guess and just take my time. Depending on the outcome of this game I'll go up, down or stick

Anyway first game will be about the civlopidia and checking out the new features in the game more than playing to win.

I'm surprised that the majority will play at Noble for their first game, since Prince is the "normal/average" difficulty.

Even more surprised as most people on this forum are Civ veterans!

I will try at prince. This is for the simple reason I do not want to have any advantages. I am an immortal/deity player in civ4, however I want my first game to not be a oneside roflstomp from the AI.
On the other hand I expect even to loose my first game at prince, for the simple fact everything is one big learning experience in civ5, and if I do loose I will keep playing at prince, so I can improve.
If I win my first game however, I am certainly going to play the next difficulty.

My first game was on King as the Romans. Its pathetic. Napoleon, Cyrus, Monty, and Suleiman were my neighbors and they never seemed to expand beyond four cities and were always an era behind me. My rifles are currently mopping up Suleiman's pikemen. They never seemed to keep a solid battle line. Archers would be in front of infantry, they build too few siege weapons (which are monstrously powerful in this game.) I think the AI is better at just massing huge stacks of doom in Civ 4 than it is trying to be tactical with few units in Civ 5.

I really hope this game provides a challenge higher up otherwise I'll just go back to Civ 4 and play immortal where I am still challenged to this day. I don't consider myself an amazing Civ player, but so far the AI hasn't impressed me.
