But isn't the problem that all other remaining non-conventional sources of oil are relatively expensive to process? So on one hand we have traditional and cheaper oil sources drying up, while our technology improves and allows us to extract the more expensive varieties cheaper.

But all this stuff is finite, how can we not run into a problem at some point here?

Yeah, that's the problem on paper. Each unit just becomes progressively more expensive to produce. On top of that, we have rising demand (through affordability), which is actually a good thing. And so, we can expect rising prices just through economic growth driving up the price. It's not technically a bad thing, but we'll whine and complain. The true fear is when the energetic cost of extraction approaches the delivery. Like I said upthread, though, AGW concerns loom long (long!) before we get to that point.
