The "Norman" one doesn't scream Norman architecture at all to me - but who knows, how exactly they define the Normans. Looks more Swiss to me, or somewhere more downstream the rhine.
The last one has a bit of Italian vibes.

Maybe it's an exploration age German state? Prussia?

Could very well be. But for Prussia specifically, something more Palace-like might have been a more iconic option. I‘ll see if I can find the building after which this is modeled.

This looks like it could be in the same style as that last town center, maybe it's the palace version:

I initially thought it could be the Great Library, but it looks too small to be a wonder.

Bulgaria or Byzanz most likely. At least the feeling that I get is a mix of orthodox monastery with Greek townhouses.

But the surrounding architecture in the city doesn‘t fit with that. Looking at the screenshot of the city, it gives me more of a Japanese or SEA vibe. I have very limited knowledge of ancient Japanese architecture, but the palace doesn't look like that to me. It could be world builder shenanigans - or that someone build a Byzantine city on top of an ancient Japanese city, for example.

The Mughals are descendants of Timur, who has a weak claim to being the heir of Mongolia. But Bonyduck has a good point that they would both be exploration age… unless you take into consideration the formal end of the Mughals is 1857, then maybe they could be modern?? I have no idea if they would do such a wacky thing lol
Mughal power ended way before that ,at that point they were more of a shell who had little power outside delhi or even in delhi for that matter.
I would also like to see marathas .

Kindaaa looks like San Vitale? I might be biased though, that was one of my predictions/wishlist. That would also be two wonders/buildings from Ravenna, (Mausoleum of Theodoric) and we did see that city name I think.. as a Roman city if I remember correctly? But on closer look, I don’t think so, I’m gonna keep thinking about this one!

San Vitale would be a great choice, and it would explain why it appears in a Japanese or SEA city. However, as strange as many wonder depictions are, I can't imagine that they would do a round San Vitale? It's one thing to have complete nonsense architecture for wonders that looked like that for many games (Hanging Gardens, Oracle) to keep them recognizable, but if you introduce a new one...

Yes you're completely right, it doesn't fit beyond just the drum at the top, and maybe there is a some connection with the gable roofed protrusion, but you're exactly right with the base, San Vitale is not round its an octagonal, and that is something they would show I think. I am also thinking Byzantium or some eastern European power like you are though!
 
I noticed this very distinct looking building in the background of one shot:

It looks like it could be Cambodian/Khmer architecture.

For comparison, the one on the left is the the Phnom Penh Royal Palace and on the right is the Silver Pagoda.

Saw a Dragon icon in a clip, with Confucius as the leader, alongside other Antiquity civs. I assume that's an old Chinese dynasty.

It's probably a dragon since it's Confucius.
