Ottomans are too much work, with all the wars they start with, it's crazy.
Though the Golden Horde looks nice for a future, war aimed game (except for every time your leader dies, it's like a total civil war).
Instead of Portugal, I think I might try a lowlands country (much smaller, but isn't too hard to cope with).

In another one of my games, I choose the Papal States. I decided to use the cash cheat (gave me 200K+ money), and tech investment cheet. The year now is 1538, and I've got the max level for land and gov. tech. I have a HUGE North American empire (moved my Capital to an island in Canada), and have been slowley chipping away at the Ottmens for the past 25-40 years or so. I have about 30K manpower, and have colonized all the way up to Iowa (Colonist cheat). I have also demolished the Indains (along with Castille). Also, the Bysintine Empire was reborn, and Poland is reduced to rubble (has two provences left from past wars with Islamic countires). Where should I go next: destory a very weekend Ottoman Empire, destory the Bysintine Empire, or continue colonizing?

I've stopped expanding in my game (as Sweden) now, I only take provinces with cores and when the neighbour starts it.
Instead I recreate and release countries with other faiths than catholic and muslim. In a war against a nation that could release another, I instead take those provinces in the peace deal, convert them and release them as vassal with a net reputation of 0 (since none-cores give 1 rep each but releasing also give -1 rep per province - except if the capital has been moved I noticed). In my current war against the Mameluks and Hedjaz I'll take 4 provinces with Egypt cores (which I'll release later once converted) and to counter the rep I released 4 province Hesse from a previous war.

Played Malacca last night, unfortunately, in 1532 I was wiped out by Ayutthaya. They started the first war, I gained Pattani, they started the second one, I lost Pattani, then Pattani revolted. Formed an alliance with Brunei and Aceh, but Ayutthaya overwhelmed the alliance.
I regret to inform everyone that China is currently involved in a civil war with the "Chihan Patriots", whatever it is.

Europe
-France is a big world power, most likely very high in tech, high manpower, conquered all of present day France, and has conqured most of Agron (don't ask)
-Castile: Has conquered what's left of Southern USA, Some of South America
-Munster: COLONIZED Coulmbia, lost the Coulmbian Revolution
-England: has almost conquered Irland (save Munster), my allies, got some part of England taken over by France. (again, don't ask)
-Paple State(me): Pritty much rules the world, chipping away at the Ottemans bit by bit, has a HUGE North Ameircan Empire (Captal is Erie)
-Portagal: my ally, coloinzed most of South Ameirca, conqured 1 Ottoman provence
-Ottoman Empire: Collapsed, or very near collapse. Byzenteine revival, got destoryed by the Paple State in about 5-8 wars.
Rest of the World
The Ming Empire is very weak since the Wu Empire rebelled. The Mongols rebeled, won.
And that's about it.

I did that once. At least you won't have Portugal and Spain colonizing early (Europe seems to stall if that happens).
One game, I even had a game where (Christian) Granada successfully rebel against Castillian Spain and claimed a good chunk of in southern Spain.

In my game france actually got destroyed. They started out poorly, failing to to take the English cities in france. For the next 70 years they seemed to be doing all right, eliminating every french minor except for provence, and burgundy. Meanwhile though burgundy expanded east and kept on getting elect hre. England formed Britain super early and built the largest army. Then burgundy declared on them and made them release a few minors. But during the war France got excommunicated and Milan, GB, Denmark, Castille, and portugal all jumped on them. About ten years later Gb annexed Ile de France.

Playing as France starting with the coronation of Louis XIII (1610) I began by bullying Spain (annexed the Spanish Netherlands and Franche-Comte whilst my spies set up rebellions in Galicia and Navarra, both of which are now semi-independent). I then rebuilt for an all-out war against the Ottomans (who were laying siege to Vienna). I flooded their land with around 80,000 men (beyond my support limit, and they died by the bucket-load) and managed to secure independence for Transylvania, Croatia, Bosnia, Albania and Bulgaria. About a decade later the Austrians (who were by then my allies) declared war on the Ottomans (and I joined in as the truce was long gone) and an Ottoman super-army annihilated us both in a single battle (I lost 75,000 men and the Austrians lost 30,000, the Ottomans lost 60,000 but had plenty of men left over). Just then, with my army completely destroyed, Spain declared war on me, dragging along Portugal, England, Venice, Denmark and Wurzburg.
