There's no way Giza is the capital. As you can see it isnt present when they first settle the User capital. And then it's borders appear midgame. So, it was probably a satellite city that lost its initial capital. Compound that with the fact that when they conquered that city, her game was over. So it's more likely she lost some cities and was down to the last one.
It might not have been the original Egyptian capital. Giza is a very poor choice but I could see capitals being razable. They are obviously want more diversity in gameplay and changed the victories. If conquest is not about owning all the capitals they could easily make them razable.
There was no puppet option when taking the city either just keep or raze.
The puppet/annex option might only appear after the occupation was done (since there is no reason to annex before that.
So when you take the city
Keep (occupied city for a while) or raze (no city after a while)
Once the occupation ends.....
Puppet/Annex (you probably can annex later if you want)
If you annex, then it asks you what you want to build.
They won't, they want everything to be easily readable on the map. Gameplay always has priority. Do you get annoyed by pikeman been taller than skyscrapers too?

I really hope puppeting returns as games can get really bogged down with 10+ built cities. With the district system I worry puppets would be really inefficient.
Hagia Sophia looks like:
4 Faith, +2 Great Prophet points per turn
Missionaries and Apostles can spread Religion 1 extra time. Must be built on flat land adjacent to a Holy Site district, and you must have founded a Religion.
So it would seem that Missionaries, Apostles, and Great Prophets are all separate units. Not sure how Apostles are different from Missionaries.
Venetian Arsenal
+2 Great Engineer points per turn.
Receive a second naval unit each time you train a naval unit. Must be built adjacent to the Coast and adjacent to an Industrial ZOne district.
Mont St. Michael
+2 Faith, 2 Relic slots
All Apostles you create gain the Martyr ability in addition to a second ability you choose ??????. Must be built on Floodplains or Marsh.
Mahabodhi Temple
+4 Faith, +1? Great Prophet point per turn
Grants 2 Apostles. Must be built ???? ???? adjacent to a Holy Site district with a Temple, and you must have founded a religion.
Terracotta Army
+2? Great General points per turn
(and then a whole lot of stuff I couldn't make out)
Colosseum
+1 Culture, +1 Amenity, (+1 Amenity and +1 Culture for all your cities).
Must be built on flat land adjacent to an Entertainment Complex distrcit.

You will also notice that Big Ben is built on what was a farming district when the city was originally founded. One that was restored to a farming district after having been pillaged by Egypt. There is no indication that anything was done to this tile other than construct the wonder on it, although since the video is at high speed, it's possible that the farm had to be removed first.
In the first screen shot, there seems to be horses on the tile to the lower right of the screen. However, it is seen as coal in the second screenshot
Maybe resources can get exhausted?

Yup! In my mod they're simply the Mausoleum, the Great Opera House, the Great Mosque, and the Leaning Tower. Also Oxford is the National University and the East India Company is the Merchant's Guild.
There are a lot of "great Opera Houses" and there are a lot of "great mosques". I'm from Sydney and never in my life have I ever heard it referred to as the "Great Opera House".
