Paris is cranky because it is too big for now. The answer is to play with the Happy Slider and increase the luxury rate.
Paris and Orleans are building markets, which will not do much to help their unhappiness. For markets to be effective, you need to have more than two luxuries connected or imported. Right now only dyes and incense are connected. Not good.
What I Would Do
I haven't been able to follow all the discussion here, so what I say may step on someone's toes.
Given that this is a Conquest game, and that the plan is to conquer the world, who is the first target? I would suggest the Vikings, which means taking out the Aztecs along the way. Vikings have Bezerk units, which are early Marine units that can attack from offshore. Kill them early and you don't have to worry about your coastal cities being sacked. Taking the Aztecs out is just a bonus. The Aztecs are closer to your borders than anyone else. Get rid of them.
After Paris and Orleans finish their markets, let them make settlers to reduce the happy issue. Plus, you'll need settlers to fill in the territory gaps created by your expansion.
Send two setttlers to settle on the silks between France and Portugal. You need them to make the markets a bit more useful. And the new luxury will help with happiness in the non-market cities.
Gang the workers together into groups of 2 or 3 to finish tasks quicker. Roading needs 3 workers to build a road in one turn (and thus be useful the following turn). Irrigating works well with 4 workers but can survive with 2 workers. Mines works well with both, needing 6 turns to mine flatland and 12 turns to mine a hill. Wait, France is Industrious, with each worker turn equaling 1.5 worker turns counted to task completion. Thus, 2 workers can make a road in 1 turn, not 3.
Assemble the forces together for your assault, except the scouting units that are fogbusting. Republic doesn't need MPs in the cities for crowd control, so put those guys into use.
Build veteran units only. Or catapults in cities without a barracks. Don't underestimate the power of throwing rocks at cities. With enough cats you can damage each unit defending a city, making it that much easier for your other units to attack, kill and capture the city.
Remember, these are what I would do or suggest to do.
