Any tips for good city sites?

With my first four settlers, I build Moscow (I dislike ahistorical capitals), St. Petersburg (2 south of the copper), Minsk (between the wheat and pigs) and Kiev (1 north of the iron). Vologda (4 north of Moscow) is a pretty nice city, though it'll need workshops/lumbermills at some point. To the south, I like Stavropol' (2 west of the sheep) and Caricyn (1 southeast of the iron), building several farms around Caricyn early to get it growing.

Change Kiev to 1 W of wheat and Stravopol into Rostov-na-Donu and I totally do the same.
 
What's the point of Minsk? Just for flavour? It seems to have too much intersection with Sankt Peterburg and Kiev.

Not really. If you place St. Petersburg 2 south of the copper and Kiev just north of the iron, there's plenty of room for Minsk, which will grow fast and be an excellent science city.

At least AI Vikings decided to settle Copenhagen in its historical location. Next: Have you seen them settle Iceland before astronomy?

Only if they control Inverness it's possible, since galleys can only cross ocean within your own cultural borders.

They should get a Carrack unit around 1000 AD to colonize Iceland and Vinland, although it would be more historical, Spain's UHV would become impossible.
