My hobbies will not really help Kyriakos right now, since they're all... kinda restricted right now.
Sports (weight-lifting and running; yes, admittably not the most exciting things), dancing, going to live-comedy, pub-talks and museums are not hobbies which can be exercised tremendously right now (besides running).
I got a lockpicking set with some test locks, that actually seems to be quite nice, and not so complicated.
I thought about knitting, to have a really practical skill lol, but haven't made any steps into that direction.
I gotta say virtually all your hobbies sound equally boring to me as watching buses. watching buses seems pretty decent honestly, maybe that'll be my new thing. I'd much prefer being on the bus though, more of an ethnological approach

honestly, most "old people" hobbies are pretty damn cool. lockpicking is incredibly neat though, that's a top tier hobby right there, and pretty unique to boot.
I don't use tinder, but if I had the choice between someone whose hobbies are dancing, meeting with friends and working out or someones whose hobbies are knitting, watching buses, repairing things and feeding birds, that would be an easy decision
to me, niche hobbies are the most fun ones. I actually do share most of your activities, I do work out and go to museums/shows often, or used to, but I wouldn't really call those my hobbies. talking to old people is also something I do, but similiarly would never call a hobby.
recently I've been doing this: doing macrophotography of insects and plants, fermenting foods, making cheese out of things that aren't dairy, kräuterhexing or shamanism (as in discovering both the medicinal and.. recreational aspects of local flora), designing t-shirts, learning video editing and advanced motion design, and doing a podcast with my friends. I still have kept some of my old hobbies like playing and modding video games, writing poetry and painting, but I do them much less now. same for, ironically, cooking/baking and working out, which people seem to do much more now with the pandemic.
I'm usually more of an arts guy but virtually all my hobbies are natural-science related. photography is just a mixture of optics and composition, pretty much pairing traditional painting with physics. modding video games is mostly logic and advanced problem solving. a lot of the stuff I do with food is just organic chemistry. those things are really fun because they have tangible real life results. it's cool to read a book about fermentation, but it's another thing to create a flavor you've literally never tasted before.
so yeah, this would also be my call:
Take up vegetable gardening or cooking, useful and has enjoyable results.
or baking, or brewing, or anything with results you can actually experience for yourself.
