What probably makes them a bit offended is that by calling them eastern europeans, we interpret the world in cold war perspective. I think it's a reasonable to be annoyed by that. They want to move on, and not dwell on the cold war and communism.
"Eastern europe" term was good in the cold war, today it does not describe the reality, that's it. I sometimes use it myself and do not feel offended by this, but the world is changing while some people still seem to be stuck in cold war and "democracy vs communism" view.
