Anyone still playing Medieval II?

Poor you, the Crusades are actually kind of hard :(

In the Vanilla they were pretty easy, you could even resort to gamey tactics as blocking the bosphorus crossing.

In SS you can't block the crossing (or you have to have an epic large navy), more crusader armies attack you, and all Crusader units (except pilgrims) have way better stats then you're units will ever have, even my newest units were were absolutely pathetic compared to a normal unit of theirs. And worst of all, is the fact that the only melee only cavalry units (arab cavalry) take 3 fricken turns to build[pissed]
 
So I've conquered Jerusalem and Damascus as the Holy Roman Empire on a crusade. Any tips for this stage of the the game? Is it worth managing a sort of "dual empire" or should I sack the city and disband my troops?

I've kept the cities. I don't know how feasible holding onto them long term will be. It's caused a huge drop in gold production.

One unrelated question: when enemy armies approach my cities, should I remain behind the walls and wait for them to attack or should I sally out if I can overpower them? In a real life scenario I think the obvious answer is use the city defenses to your advantage. But in this game I'm not so sure this is the case - you can maneuver better outside the city walls.
 
There's quite a few valuable resources in northern Egypt. I would keep your colony just as a forward position to expand further.

Do you even have this game? You can't play as the Mongols or the Timurids in the grand campaign.

There is a way how to play as Mongols or Timurids in the grand campaign.
You start the game as some other faction.
Then, you open the console and type: control_faction mongols
Now, when the Mongols appear you can control them.
Until they arrive you can either play as the faction you first chose or you can use the same command (control_faction) to switch AI on for that faction.

There is also a tool called MedManager and it allows you to edit saved games.
If you have it then you can just skip some 150 years. Though, this means that all factions will have basic technology and are no match against the Mongols.

So I'm into M2:TW again and this time I'm playing as England. I've conquered all of Britain, Ireland, Rennes, Belgium, and Hamburg - the entire coast of north western Europe, essentially. But now, everyone near me is declaring war on me. I've already had France and HRE sneak attack and I'm worried about Denmark and Poland (who controls Madgeburg) doing the same. So I'd like to try currying their favour... but when I tried giving France gifts and gave-in to their demands for tribute, they attacked me anyways. So what diplomatic options are effective?

Also, is there any way to get a nation you're at war with to sign a ceasefire if they're not the ones offering it?
 
The effective diplomatic options are to build bigger walls, keep bigger garrisons in border forts, and entirely annihilate the enemy so they can't attack you anymore. I mean, come on! This is a Total War game! The diplomatic options are only in there because the fans would whine incessantly if they weren't. The devs didn't ever really expect them to work. It's not like the AI is anything bordering on competent anyway...
