Depends. By itself, crispy. In a burger, chewy.

While I dont feel bacon has any biz in a burger you are right that bacon is good different ways in different circs.

Also, bacon is the scret ingredient in making your own stock. Or chopped so fine it disolves in stew.

I prefer my bacon somewhere between chewy and crispy--it definitely has to make a clean break in my mouth, but it still must retain the succulent sweetness which typically accompanies chewy bacon.
