As for the insane advantages I can only give this kind of example. Be forewarned that I am basing this off of my Civ 2 experiences, but I am fully aware that this (Civ 3) is a much different game than Civ 2.
Imagine me and my neighbor (The evil Zulus) discover Bronze working at the same time. Imagine Bronze working triggers the option of building phalanxes for me, and impi warriors for them. Phalanxes (Attack 1, Defense 2) are my best defensive option, so I will build them in all my cities as quickly as possible. Meanwhile let's say the Impi (Attack 4 defense 2) can be produced cheaper (hey it is a special unit). Soon, I will be dealing with an angry horde of unstoppable (In 3500 b.c they will be tough to kill) Impi warriors. With city walls I should be able to stop them, but I will have to immediately go to that strat when I see Zulus in the early years because I may not be able to compete with them and their special unit. Plus, I can just see the AI already pumping out 175 Impi warriors and sending them to run roughshod over my terrain

I love the idea that I can turn it off, and the special units for putting together custom Civs is just brilliant!!! I mean it is really brilliant. I had thought out quite a bit about good things and bad things with the Custom units and had never seen any real good reasons for them. *Applause*
But I will be leery of anyone making their own civ with custom unit in tow. I mean, a swiss pikemen should have pretty good defence in my opinion, but I can already see the Swiss pikemen of doom that some joker will create (Attack 7, Defence 23 available with irrigation). Or the Swedish Bikini Team (Attack 89, Defence 32 Available with beer brewing). My only hope is that these kind of things will not be allowed (Somehow????) in Online play.
