So, just started a normal prince game as Montezuma, first goody hut pops a map, giving me contact with Catherine. 5 turns later I get denounced, and she starts being openly hostile.

Is there any logic at all to this?

I get that AIs have to be a little random, but this just seems silly.

Also had a recent emperor game where Napoleon kept backstabbing everyone on the continent. It got ridiculous at some point, when he was still declaring people with obviously bigger armies.

This explains Napoleon.

Cathy is an expansionist does she covet your lands?

I can't say I remember ever being denounced that early... but I've had a bunch of civs hostile towards me and insult me that early before.

Obviously, you are trying to win the same way she is... even if you don't know which VC you are trying for.

You rolled a game with high flavors of hostilities. This is rare, but it happens. I once have been denounced at turn 3 and hostile...from Ghandi!

The good news is that you didn't start near Bismark.
He'd have decided to do the "pretend friendly" thing on turn 7, and build up his army and DOW you in a "surprise" attack.
