Their own navy is far too big for me to get the control of the sea, but I managed to use their previous wars against Timurids and the Golden Horde to jump on them when their army was tiny.The Ottomans are easy to conquer as long as the Byzantines are still alive (and in my case as Italy from Milan, your vassal). You just have to destroy their army, put your navy in the Sea of Marmarra (or whatever the sea is that is between Thrace & Bithniya), and conquer their Europe holdings.
