How is your EU3 Game going?

I can't decide which country to play as. I want someone who is a challenge, but nothing suicidal.

Byzantium it's probably perfect, kill the muslims in anatolia, get some awesome missions, conquer everyone and be awesome :D

My current Rome game in the Death&Taxes mod, awesome, so far i've beaten massive Mamluks, Austrians, Hungarians, Frenchies, Brits and Mughals :D

I'm allied with the mighty Novgorodians, they are waiting for Moscow to core so that they can form Russia ;) (they annexed vassal Muscowy some years ago, so soon it will core)
HRE Burgundy, massive Bavaria, and lots of other blobs in the HRE are orthodox, i force-converted them some time ago, after orthodox pwned-Austria lost the crown, thanks to few ellectors being orthodox.

There's a map of the world when the Austrians (same dinasty as me and still allied at that time), Mamluks, Mughals and even the Hungarians were still strong, the Mamluks and Mughals were at their power peak, they were massive, had massive armies, and no one near could beat them, until i started expanding there :D
England was not at their peak, they would colonize most of South America and annex most of Morocco among other territories before it, they would be massive, until i started the Reconquest of Ragusa and ROFL Pwned them at North Africa with a awesome general and 16.000 soldiers, this destroyed their WE and made them release Tunisia (Diplo-Vassalized to me later) and some other catholic africans (Algiers and even Tripoli) revolted, Tripoli however, was annexed in a war their allies started...

Bretagne starts with some pretty sick civics. You also start with a Burgundian alliance. Theoretically, you could start by romping in Ireland (same culture group those Irish) and hope Burgundy evolves into MegaBurgundy and beat France that way. Totally feasible.

Conquered Wales and Cornwall after they became independent. Leinster is a bit too powerful and are protected by Scotland, so I'm going to leave them alone. France's has ended the vassalization of all the smaller OPMs, and I've gotten an alliance with England for the inevitable showdown with France.
 
Okay so I think I got the hang of EU3 but I seem to be having trouble actually conquering land from my neighbors. For example, playing as Castile, I understand that you can force an annexation if there's their home province left but I'm unsure how to do that with a multi-province country. How do I conquer their neighboring provinces?
 
I thought I did. I had troops on Gibraltar, Granada and Almeria but when I hit the sue for peace option, the annex button was greyed out.
 
I don't think so. They did lay siege a few times on my neighboring provinces but I drove them out.
