I've asked this about a billion times and nobody seems to respond.
Where does it say that the new resource "gives away" the new civ? I watched that one interview and all that is implied is that the new resource is tied to the new civ and he doesn't want to release either information unless he releases them together

Depends on how you interpret it, I suppose. Sounds like the new Civ has abilities that revolve around this resource (may be that none of the other Civs can even use it?). Doesn't say anything about "revealing" but it does imply that it is a resource that this particular Civ is more closely connected to than others.
It will be whatever it actually is, so no ones speculation or guesses really matter in the end, but I personally think it more likely that it is going to be a resource that cannot be easily connected with a wide number of Civs, such as rice. From a design viewpoint, it just seems sloppy. A common resource yet only one Civ is directly connected to it for whatever arbitrary reasons?

I'm assuming some resources (with some crazy ones too) from each continent:
The Americas: Buffalos for Sioux, seals for Inuits, corn for Olmec but La Venta is a CS already
Europe: Glass for Venice
Africa: Zebras/lions/giraffes for ... Benin or Ghana? idk
Asia: Rice for Indonesia, Vietnam, or Khmer
Oceania: Kangaroos for Australia or Aborigines

Venice was the major producer of high quality glass in medieval/renaissance Europe. They were also capable of creating very colourful, elaborate, and skillfully made glass.
It was one of their most valued exports in Europe, so valuable that the Venetians outright murdered anybody who tried stealing their secret of glass making.
But thinking of bisons and the Sioux as (not so) nomadic tribe:
Wouldn't it be interesting to add a "migrating" bonus resource? Imagine bisons moving to another tile (grassland and plains without forest only) every other turn. Maybe they could be "anchored" to a certain tile and do not move further than 2 tiles away from it.
They could be usable only by the Sioux and add an additional +1 and +2 to any tile they rest for this turn.
(Sorry, I know this is a way to wired idea and I wanted to share it just as a fun gedankenexperiment. Those things happen when fasting for too long... )

I looked up Bohemian glass since you mentioned it. It seems that Bohemia was a source of good materials for glassmaking which attracted glassmakers from other parts of Europe in the 1300s. Bohemian glass is lead-free unlike Venetian glass.
Venetian glassmakers were treated like celebrities, but they were not allowed to leave or share their knowledge outside of the city under punishment of death. Some eventually did escape with their lives and settled throughout Europe. Some of the Bohemian glassmakers probably came from Venice.
1. Add Bison as a resource that works like Cows in game already do.
2. Add a civ that has a UA that generates trade-able pelts for each Bison resource the civ controls.
3. Profit??
