Her leader screen was uninspired and because apparently there are no actual English women in North America they got an actress (Canadian, I think) with the worst English accent since Dick van Dyck. I wouldn't have minded her with a better voice actress.
They could have, but I don't think that would have been as good a choice - there's less continuity and little that can be pinned specifically on any one Imperial-era Prime Minister's period as opposed to the Empire as a whole (not least because Disraeli and Gladstone kept switching places). Victoria presided over nearly the entirety of the Empire's greatest pre-20th Century period of expansion and consolidation, she was seen as the unifying figurehead for the Empire by the British public of the time, and there's simply much less recognition in the UK and internationally of people like Disraeli and Gladstone, let alone pre-Victorian Imperial leaders like Palmerston.
As for "Elizabeth is the most famous English Ruler" that's certainly not the case here in England/Britain. For us here in the United Kingdom, Victoria is probably with out a doubt our most popular monarch and our most popular "leader" would be Winston Churchill. Elizabeth was... one of the leaders along with Henry VIII that people get thought of in primary school here (Primary school is the first stage of school; followed by High School) but otherwise Victoria is defiantly more popular over here.
This is probably either a recent phenomenon or a regional thing for areas like Scotland for which Henry and Elizabeth were less directly relevant. Education at least as of the '80s and '90s very strongly emphasised the Tudor period and rather glossed over the Imperial period other than its industrial innovations. Popular BBC period dramas were very strongly focused on the Tudor period.
At that point our best-known monarchs other than the present one were almost without a doubt Henry VIII, Elizabeth I, Alfred the Great, Richard I and, due to his association with Robin Hood, King John.
Though back then as well Churchill would have been the most popular leader, due to the national obsession with WWII that's been ongoing pretty much since it ended, never mind that he wasn't popular enough at the time to win an election.
Sadly I doubt we'll see James I because it would be strange to have him for a civ with no Scottish cities in his city list, and I doubt they're excluding Scotland from "The Celts" any time soon.

The Monday tease gif didn't come from Ed, that was from the game's regular social media. It was also at 12pm EST on the dot, so it will likely reoccur at that time.
And I think the regular non-DLC livestreams were on Thursdays. They will probably start in January.
And I doubt they do any special Natural Wonder reveals. That's better shown in the livestreams.

Is it really worth animating and designing each entourage for leader screen? It seems like a waste of money in hindsight, but my general point is, they had a good idea that would never work, hence the "underwhelming" scenes.

I recall that Napoleon was supposed to have troops marching behind him. That would have been really cool.
Out of the vanilla V civs, Gandhi was by far the worst. If I hadn't read somewhere he was on the Ganges, I wouldn't have known. Askia, Darius, and Montezuma were all pretty good though. Caesar's wasn't impressive, but he had good mannerisms. Nebuchadnezzar throwing his goblet was also a fun touch.
The leader screens got much better as the expansions rolled out. Personal favorites were Pacal, Dido, Gajah Mada, and Pocatello.

In all of my recent games, I've been going for domination victory. I wonder how the loyalty system would impact that. Would a lot of the cities I conquered declare independence when loyalty is too low? And how would I increase loyalty in the conquered cities?
