As for "rebuke you in the name of Jesus"... she shouldn't have said that. It can be a trigger word for some people.

Still trying to understand what could have triggered such an immediate vicious response. Mental illness? Mind altering drugs? Desire to kill?

Then the cop moves away from Sonya, right after she picks up the pot from the stove. Which seems to me a rather excessive overreaction, given that there was no danger in the room for two armed 6 foot guys from the little lady with little hot water.
And then he (they?) take the joke the wrong way. He is clearly surprised by the joke, there is "Huh?" from him, so something within that sentence triggers him, be it "rebuke" or "Jesus". Notice the other cop holds his right hand on top of his gun, while Sonya walks from the stove in the "ready, ready" position, raises the gun within the millisecond of escalation. Without turning his head away from Sonya.
There was no need to carry that pot away from the stove, could have just flicked the gas switch back to 0 and deal with the rest of it when the cops are gone. But, she was probably operating in a familiar pattern by taking the pot from the stove towards the sink, without thinking, automatically.
It is a very strange sequence. One has to work hard to stay alive in presence of cops in America.
