You may vote for your favorite and discuss it, but you may also rank the flavors, or add your own of the less commonly regarded ones (like astringent).

I've realized that my favorites are bitterness and spiciness. I know that most regard bitter as an unpleasant flavor, but many of my favorite things are bitter: coffee, beer, unsweetened tea, dark chocolate, olives, and I tend to seriously dislike sweet things like milk chocolate, slurpees, and other candies. But, counter-intuitively, I only like sweet wines.

Spiciness is an exciting flavor, that's probably why we describe feisty girls as "spicy." The two are similar in many ways; fun in tolerable amounts, but too much can burn your mouth. No that's not a herp joke. I like a lot of Cajun and Latin American foods, especially Mexican.

I also enjoy savory flavors like meats, cheeses, and fish, because who doesn't?

Sour is also good, but there are only a few things that I like that are sour. Sour cream, of course, and the citrus fruits, and the occasional sour-flavored candy. But its easily overwhelming.

I generally don't like excessively salty things. I don't season most of my meat, but I might add some to a recipe, like potato salad (which can really need black pepper kernels sometimes). Sauerkraut and salami are the major exceptions here.

So I would rank them, from favorite to least favorite:

sour ftw! especially liked sour/sweet candy as a kid. just love the way it implodes in your mouth.

was a bit weirded out by Mexican kids going for spicy/hot treats or sweets.
 
No sweet n' salty? Aww...

Anyways, I guess I'll rank sweet over salty :D

What a simplistic thread...

How can you say which flavour is the best? Every food has a combination of flavors, unless you like to nibble on sugar cubes, indulge in pure salt or enjoy a good glass of lemon juice... in addition, most of the uniqueness of a food's flavour comes through the nose, not the tongue.

Yet I would say savoury (also known as Umami is the most delicious. However, this automatically comes in combination with salty. Examples are aged cheese, a stir fry of shiitake (chinese) mushrooms (best mushrooms by far!), a good quality of cured prosciutto etc. These are all salty. I cannot think of a single 'savoury' or Umami food that is sweet, for example.

Also, spicy isn't really a taste, just the sense of heat triggered by capsaicin (no taste buds involved). Mint does the same, but triggers a sense of cold.

Conclusion: you can't say which flavour is the best. After an elaborate dinner, you'll surely enjoy a sweet dessert. And combinations like sweetnsour are always nice.

I will view 'Savory' as an attempt at it.
 
I think savory is a very good and more widely known description of umami.
