Granting titles also helps you from a prestige perspective. You as the ruler receive the prestige for your directly-held territories and vassals, but you also want to build up your kids' prestige by giving them titles so when they ascend to the throne, they receive the diplomatic bonus. Also, you get penalized in primogeniture if your kids don't hold titles.
If you want to conquer territories with your warlord, make sure you fabricate titles only when needed and then usurp the duchies. It saves on prestige and money in the long run.
Just remember do not ever give the successor even a barony, to keep control of their actions. This is important as you also want to keep his heirs well educated, and control his wife. He needs to be in your court for him to be forced to accept your choice for these. Meaning his first son should only be educated by you.
