The jet engine manufacturers use cannons to fire frozen turkeys at those engines to simulate bird strikes and try to toughen the engine up to survive that sort of thing. But as you can see, their results are not foolproof.

Isn't the testing requirement something along the lines of "engine must remain able to be shut down after a strike from a large bird" where a "large bird" is like 4 or 5 pounds? In so much that if you lose one engine, the plane can still fly and land. If you lose both you're in trouble.

I can't imagine a turkey being fired at engines. Wild turkeys get into the 30-40lbs range, geese are about half the size. As evidenced, geese can knock out an engine; a turkey would just mutilate one.
 
They use hawks at airports to scare birds away, there very effective actually. In fact, most of the time you wont see a bird at an airport or anywhere near one because they've become very good at stopping birds from hanging around them. The problem is that you cant do that for the whole . .. .. .. .ing sky.
