If the Assyrians were in the Mesopotamia Scenario, what should their Unique Unit be???
Its a tough call really, there are so many options. The Assyrians are famous for Chariots, so an Assyrian Chariot would work. They are specifically famous for the heavy, 4-Horse Chariot, but it wasn't their most effective Chariot. They were also one of the first to switch to Cavalry, and were very effective Horse Archers.
But let's not forget their infantry. If I go by units already created, I'll say Siege Archer and leave it at that (An Archer with a shield bearer, the Persians coppied the unit for the Sparabara).
Also, they were great a siege warfare, so some kind of siege tower would work well.
How about UU's for these other Mesopotamia civs....

Sargon created the first perminant military. I would say some kind of warrior replacement, probably lightly armed with a spear and maybe a wicker shield.
Not positive about the military of the actual Nubian civilization, but an important part of Egyptian society was the Medjay. They were originally Nubian Mercenaries, because the Egyptians were terrified of dying in a place where they wouldn't be burried properly. Eventually, though, the Medjay became the police force of Egypt.

Rulers of Babylon through a suprising amount of the their history. Bowman seem to work fine.
IIRC, Assyria learned Chariotry when they were vassals of the Mitanni. So I would give them Chariots. They were also the rivals of both the Hittites and the Egyptians...
Since there is a Maccabee unit, I'm probably going to suggest that. I honestly don't know much about the armies of Judah and Israel. I think they raised a cavalry army to help Damascus in a revolt against Assyria, but I'd assume they had similar troops to everyone else.
