It does depend what is in the sandwich, or rather, what the mayo/mustard is in. This is the type of question that has been pondered by swamis and lamas for centuries to no avail. They even figured out the old chestnut about the sound of one hand clapping before this one.
But now, having got permission from the Seven Heavens, I can reveal the answer:

I love mayo on chips, which is a bit odd for a Brit, and something I picked up in France. My favourite sandwich would be a simple rocquefort and lettuce, without a hint of mayo. Mustard doesn't go with anything but meat in sandwiches I find, and since my girlfriend's vegetarian I don't have too many meat sandwiches any more. Still manage to squeeze the odd one or two in though .
